Gilthead bream
Sparus auratus
Also known as: Gilthead seabream
Overview
Gilthead bream sustainability varies. Those seen in restaurants or fishmongers are mostly farmed, look for those certified by Aquaculture Stewardship Council (ASC) or GLOBALG.A.P. These standards address some of the environmental concerns. You are less likely to come across wild Gilthead bream. We don’t know much about wild populations and there is not much management in place to protect them. Gilthead (or sea) bream is widely available in UK supermarkets, fishmongers, and in seafood restaurants.
